Take your taste buds on a wild adventure with this recipe for chicken curry with a twist – buffalo worms! Ingredients per 3 servings:
– 140g Quick Mix Beef Chicken Style
– 250ml water
– 10g oil
– 50g coconut milk
– 1 tablespoon curry
– 1 tsp cumin
– Spring onion and sesame to taste
– 180g long rice
– 225ml water
– 25ml rice vinegar
– 1 teaspoon sugar
– 1 teaspoon salt
Pour the Easy Mix into a bowl adding the water and oil, mix well and leave to stand for 10 minutes.
With your hands form some Easy Mix bites, then cook 3 minutes per side in a non-stick pan.
When the bites are ready remove them from the pan and pour in the coconut milk, adding the curry and cumin. Let the sauce simmer for a few minutes and when the curry has completely dissolved, add the Easy Mix bites again and allow them to take on flavor.
Separately, rinse the rice 5-6 times until you have totally washed out the starch.
Put the rice in a saucepan and cover with cold water, turn on the heat and cook covered without moving it. When the water starts to boil, turn the heat to medium and cook for 5 minutes. After this time, cook for a further 10 minutes on a low heat. Before serving, let the rice rest 10 minutes in the pot away from the heat (25 minutes total).
Prepare the rice seasoning by combining rice vinegar, salt and sugar and stirring well. Pour the seasoning into the rice and stir with a spatula.
Serve the Easy Mix chicken curry style with the rice, add white sesame and raw chopped green onion if desired.
