EASY MIX LIKE CHICKEN CURRY

Take your taste buds on a wild adventure with this chicken curry recipe with a twist: Buffalo Worms! These protein rich insects add a unique, slightly umami flavor to the dish, pairing with the spices  for a truly unforgettable dining experience.

The Buffalo Worms not only offer a sustainable source of nutrients, but they also add a fun and adventurous twist to a classic dish.

INGREDIENTS

For 3 portions:

  • Easy Mix chicken flavour 140 g
  • Water 250 ml
  • Oil 10 g
  • Coconut milk 50 g
  • Curry 1 tablespoon
  • Cumin 1 tablespoon
  • Spring onion and sesame to taste
  • Long rice 180 g
  • Water 225 ml
  • Rice vinegar 25 ml
  • Sugar 1 teaspoon
  • Salt 1 teaspoon

PREPARATION

Pour the Easy Mix into a bowl, adding the water and oil, mix well and leave to rest for 10 minutes.

With your hands, form small pieces of Easy Mix, then cook for 3 minutes side in a non-stick pan.

When the morsels are ready, remove them from the pan and pour in the coconut milk, adding the curry and cumin. Leave the sauce to simmer for a few minutes and, when the curry has completely melted, add the Easy Mix morsels again and let them flavour.

Separately, rinse the rice 5-6 times until the starch is completely eliminated .

Place the rice in a saucepan and cover it with cold water, turn on the heat and cook covered without moving it. When the water starts to boil, turn the heat to medium and cook for 5 minutes. After this time, cook for another 10 minutes over low heat. Before serving, let the rice rest for 10 minutes in the pan away from the heat (25 minutes in total).

Prepare the rice seasoning by combining rice vinegar, salt and sugar and mixing well. Pour the seasoning into the rice and mix with a spatula.

Serve the Easy Mix curry with the rice, adding white sesame and spring onion to taste.
