Good and versatile, with a taste that's practically indistinguishable from wholemeal pasta, they hold up really well when cooked and are great in a thousand ways.
-
For lunch today I made myself a nice one-dish meal of cricket flour fusilli dressed with just pesto, extra virgin olive oil and Parmigiano Reggiano!
-
Great taste and flavour, pleasant texture, very easy-to-digest pasta.

The Small Giants extra touch
Cricket flour: what's really inside
House crickets (Acheta domesticus) farmed for food, dried and ground. A little goes a long way to enrich crackers, pasta and taralli.
-
What does it taste like?
Toasty, with hazelnut notes and sometimes a hint of shrimp. In the finished products, though, what you mostly taste is the recipe: a cracker tastes like a cracker, a tarallo like a tarallo.
-
Is it approved?
Yes. The house cricket is a novel food: EFSA assessed its safety and the European Union authorised its use in food. People allergic to crustaceans, molluscs or dust mites may also react to crickets.
-
Why should I?
For variety. Chicken, tuna and tofu get old after a while: cricket flour is another source of complete protein, ready to go in crackers, pasta and taralli.
- 9 out of 9 essential amino acids: complete protein
- B12 · iron naturally present in cricket flour
- Vietnam certified cricket farms, shipped by sea
More questions
How do I fit it into my diet?
You don't need to change your habits: just add one more protein source to what you already eat. Crackers and taralli for snacks and aperitivo, cricket pasta for meals: you mix up your sources without cooking any more.
A lot or a little?
How much protein does it really have?

Quality counts too
Complete protein
Proteins are made of amino acids, the way a puzzle is made of pieces. Nine are essential: the body doesn't produce them, so they have to come from food. Some foods contain only a few of them; our protein sources contain them all.
Crickets and larvae have all 9 essential amino acids, just like meat, eggs and dairy.
9/9essential amino acids
- Histidine
- Isoleucine
- Leucine
- Lysine
- Methionine
- Phenylalanine
- Threonine
- Tryptophan
- Valine
